Pork and Blue Cheese Phyllo Rolls recipe
Suitable for a dinner party or anytime nosh, these pork and cheese-filled phyllo treats are very entertaining worthy.
Ingredients:
1 (1-pound) pork tenderloin
Salt and black pepper, to taste
3 tablespoons crumbled blue cheese
1 tablespoon Dijon mustard
8 sheets frozen phyllo dough, thawed
2 to 4 tablespoons melted butter, as needed
Directions:
1) Preheat oven to 400°F. Season pork on all sides with salt and pepper. Place on an ungreased jelly roll pan; bake 15 minutes, turning once. Remove from oven; let rest 10 minutes.
2) In a small bowl, mix together cheese and mustard. Coat cooled pork evenly with cheese mixture to coat.
3) Place a sheet of phyllo dough on a large cutting board; place pork at one end of the phyllo, crosswise, and roll up. Gently brush butter over phyllo to coat.
4) Roll pork-filled phyllo with remaining sheets of phyllo, brushing each layer with butter before adding another layer.
5) Place phyllo roll on a baking pan; roast until pork temperature reaches 155°F; remove from oven and let stand 10 minutes. Slice and serve.
