Chili-Rubbed Pork Loin recipe

If you have the time, let the pork marinade overnight for a full, smoky flavor in this Mexican-inspired tenderloin recipe.

Ingredients:

1 (1-pound) pork tenderloin, trimmed
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon sugar
½ teaspoon red pepper flakes
½ teaspoon salt
¼ teaspoon black pepper

Directions:

1) Preheat oven to 400°F. Lightly grease a rack in a roasting dish.

2) In a small bowl, whisk together remaining ingredients; rub mixture over pork evenly to coat. Cover and marinate 4 hours or overnight.

3) Place pork on prepared rack. Roast until internal temperature reaches 160°F, about 45 to 60 minutes. Remove from oven and cool 10 minutes. Slice and serve.
