Cajun Pork Tenderloin with Vegetables recipe
Ingredients:
2 teaspoons of Cajun or Creole seasoning.
1 lb of pork tenderloin.
2 medium sweet potatoes.
4 small zucchinis.
1 ½ cups of frozen small whole onions.
2 tablespoons of melted butter.
½ teaspoon of dried thyme leaves.
¼ teaspoon of salt.
Preparation Instructions:
Preheat your oven to 425°F.
Rub Cajun seasoning into the pork.
Place in an ungreased jelly roll pan, 15-½ by 10-½ by 1 inches.
Insert a meat thermometer horizontally into the center of the of thickest part of the pork.
Cut the sweet potatoes and zucchinis lengthwise into halves.
Place sweet potatoes, zucchinis and onions around the pork.
Drizzle the melted butter over the vegetables.
Sprinkle with thyme and salt.
Roast, uncovered, for about 35 minutes or until your meat thermometer reads 160°F.
Loosely cover pan with aluminum foil and allow to stand for about 10 minutes.
Cut the pork into thin slices.
Serve with vegetables.
